狩獵直刃剔骨刀（S）

The 2.4 mm thick blade gives it the stiffness I need when working around joints, and it holds an edge through a whole elk without constant touch-ups. Filleting the silver skin off the backstrap was almost effortless compared to my old flexible knife.

I've dressed out three deer this season and this knife's 2.4 mm thickness gives it just the right amount of rigidity for getting clean along the ribcage without flexing. The blade profile stays true even on the tricky shoulder joints, and it holds an edge surprisingly well for the price.

The stiff blade made separating venison from the ribcage feel almost effortless, and it kept its edge through a full afternoon of work. That 2.4 mm thickness gives it just the right balance of rigidity and control for tight spots.
